- 100g dried pitted dates, roughly chopped
- 1tsp bi-carb soda
- 250ml boiling water
- 250ml full cream milk
- 3 eggs
- 2 1/2 cups SR flour
- 2tbsp brown sugar
- 1tsp baking powder
- 80g butter melted
1. Combine dates, bi-carb and water and let sit for 5-10 minutes. (This softens the dates slightly)
2. Combine dry ingredients in a bowl, make a well and add combined wet ingredients and combine
3. Cook your pancakes in a pan over medium heat, with a little butter to stop them from sticking. Serve with caramel sauce and toasted pecans.
